Eel for an appetizer – Earl Evans

My good ol Uncle Ed will try anything once. When his buddy gave him a smoked American Eel he’d caught in the upper reaches of the Hudson, Ed gladly took it. We ended up eating it as an appetizer last night. It was a perfect “Iron Mike” size specimen, just a little too big to throw with a surf rod.
Smokey, oily, kinda gnarly texture. Overall not that bad. Wouldn’t try it again.
